The fillet is considered the finest cut of beef and is often grilled or served as carpaccio. René does it differently and breads it like a schnitzel. Unusual, but all the more surprising in taste, the "beef fillet Milanese" is created in no time. In an alpine hut on a stove like in the old days, Schudel cooks a cozy and comfortable meal that is deeply relaxing.
